Ever since I found the “Great British Bake Off” I have been obsessed with jam cakes. They are so simple, taste like summer, and come together in minutes. Chances are, you already have everything to make them in your pantry – so let’s go!
First, bake a white cake in a jelly roll pan.
Once completely cooled, cut out smaller circles using a biscuit or cookie cutter.
Now take 2 cake circle and place them on your work surface. These will become 1 mini jam cake.
Spoon room temperature strawberry jam on the top of one circle.
Then put whipped cream on top of the jam.
And then top with the other circle of cake.
Top with even more whipped cream because let’s be real, there is no such thing.
And finally top with strawberries and blueberries!
So simple, so yummy, and so festive for the 4th of July! You can make a million different variations of this recipe, too. Think peach jam with fresh peaches, blackberries, even orange marmalade!
